IT'S HARD TO think of another food product that has risen in popularity like cheese. Worldwide, cheese consumption is expected to reach 21 million metric tonnes by 2016, representing growth of 20 percent from 2008. While the United States and Europe remain dominant as the world's leading cheese producers and consumers, emerging countries are also making inroads. With the fast growing popularity of processed cheese in the Middle East, Africa, Asia Pacific and Latin America, the category demonstrates high growth rates with a nine per cent increase in worldwide consumption from 2014 to 2018. These new markets represent tremendous opportunity for global cheese manufacturers. In European and American cheese markets, consumption has experienced steady overall growth assisted in part by convenience features ike easy-to-open and easy-to-close seals. New types and flavours of cheese products are also gaining popularity, such as healthy and low-fat options and portion-controlled servings.
