THE SYSTEM SHOWS various benefits compared to traditional products. Casings are produced on-line while sausages are being stuffed. Various opportunities and new product developments are possible through this technology. Continuous processing also results in cost-saving opportunities as fewer people are needed to handle equipment when compared to traditional stuffing machines. It is now possible to stuff sausages with diameters of 12mm, 10mm or smaller. Innovative products can be made by adding colour or flavour to the alginate casing gel.
