Rapid industrialisation and modernisation in Africa are having profound effects on food safety and hygiene, as well as food-borne disease outbreaks. Major sources of food poisoning in Africa include pathogenic microorganisms, diseased animals and plants entering the food chain, and chemical contamination. Additionally, two growing food safety issues include illegal additives and contamination of the food chain through toxic industrial waste. Africa's emergence as an exporter to global agricultural and industrial markets is also having an important effect on food supply and food safety on the continent. The majority of African governments have shown determination to reform laws, address monitoring systems and strengthen their food safety regulations. Weak links in planning, development, implementation and checking can however challenge progress.
