In 1960, when the food industry was sailing through stormy weather, a need was identified for better quality food at lower costs. At the same time it was acknowledged that the responsibility would rest largely on the shoulders of the country's food technologists. This, in turn, led to the realisation that more facilities were required for food technologists to broaden their knowledge and the idea was born to form a South African Institute of Food Technology which soon became dubbed SAAFoST.
