Consumers are demanding shorter and more recognisable ingredients' lists, and manufacturers are responding by increasingly highlighting the naturalness, origins and perceived health claims of their products. 'In order to achieve cleaner labels,manufacturers face hurdles critical to consumer acceptance, including unpleasant off-taste, unappetising colour and inconsistent texture. Overall, taste is still the deciding factor for consumers when choosing what food and beverages to buy,' says Jim Carr, director of applications at Tate & Lyle.
