The need to monitor the safety of food at every stage in the process is the only method of control in the fight against food contamination. Microbial testing, polymerase chain reaction (PCR) technology, clean food handling and processing systems must all be in check in the HACCP systems, ensuring safe and uncontaminated foodstuffs.
