Abstract

According to a recent report, Frank Labeyrie of intends to open a cellaring service under the sea in 2013. Labeyrie, believes that the ocean's cool temperature and lack of oxygen and light will assist wine to age slowly, and that this will keep intensity for longer and 'deepen' flavour.
