oa South African Medical Journal - Hygienic evaluation of biltong

 

Abstract

Of 121 samples of biltong collected in Johannesburg, 0�8% yielded a growth of salmonella and 28�1 % a growth of Escherichia coli, type 1 (faecal). Staphylococcus epidermidis was isolated from many samples, but none yielded a growth of Staphylococcus aureus. Hygienically, biltong, in its present form, is unsatisfactory.
