The preparation of a number of African relishes has been briefly descriptionbed and the proximate analysis of these foods tabulated. The calcium, phosphorus, iron and common salt content have also been determined. The results show that they are excellent complementary foods to the staple cereal and that the common practice of adding groundnut butter causes an appreciable increase in calorific value.
