A number of cereals and legumes, used in the Zimbabwean traditional diet, were investigated for their dietary fibre content. Insoluble and soluble fibres were determined separately in order to assess the distinction of various components. Both insoluble and soluble fibres have a high content of protein not affected by dietary enzymes. The high content of ash in soluble fibres is due to contamination by calcium and magnesium salts.
