The supply of quality milk as a source of protein, is vital for Africa. In order to ensure the highest standards in milk, the product must be safe from violative residues. Violative residues (antibiotics and other residues) in milk negatively affect the quality of milk, with implications for the health of its consumers. The effects include changes in taste and appearance, with a negative impact on milk starter cultures as well as on the production of cheese, yoghurt and maas.
