Yoghurt-making is an age-old tradition in many countries. There is some evidence that cultured dairy was used as far back as 5 000 years ago, to treat digestive complaints. Today it still known for giving your gut the boost it needs. But, when making thousands of litres of yoghurt for commercial purposes, the recipe for disaster is sometimes much easier than the recipe for success.
