Abstract

The profile of the dairy consumer is changing rapidly. Dairy products must move beyond meeting the most basic consumer needs to address convenience by innovative packaging and creating complex flavour combinations. The development of pronounced flavours and new packaging are becoming more important as consumers search for unique flavour combinations, added nutritional value and consistent quality.
