Milk is a complex biological food and by its nature, a good growth medium for microorganisms. Because of the way in which it is produced, it is impossible to avoid contamination with microorganisms. Therefore, microbial content of milk is a major feature in determining milk quality. Bacterial contamination can originate from many sources, including air, milking equipment, feed, soil, faeces and grass.
