In traditional wet chemistry, milk component analysis (including fat, protein and lactose) is relatively unusual owing to its time-consuming nature. These days, large amounts of money move between buyers and sellers of milk; therefore, there is a high incentive to develop and refine methods to achieve a level of analytical performance rarely demanded in analytical chemistry.
