Would it be good for the dairy industry if consumers suddenly developed a greater taste for dairy either by a popular new product or if some popular doctor or television celebrity such as Prof Tim Noakes, Dr Oz or Noeleen could say something to excite demand? Of course, but is this really the correct answer for the current dairy industry? Would the industry be able to handle increased demand from local resources? In this article, I will try to act as a futurist and consumer trend spotter.
