Provided the manufacturer has the necessary skills, knowledge and experience, high-quality dairy products can be obtained using relatively few processes." These were the words of Prof Marc Bachman, one of the pioneers in the field of dairy technology, in 1987 in Nairobi, putting the recent advances in dairy processing equipment in perspective.
