Abstract

Increased global trading activities and incidents threatening the quality and safety of food have resulted in food safety becoming a growing concern over the past decades. Tracing food through the production and distribution chain (farm to fork) to identify and address risks and protect public health has become a vital component of food supply chain processes. Traceability is a risk-management tool that allows food business operators or authorities to withdraw or recall unsafe products. Traceability is at the heart of food safety but is also a tool to combat counterfeit products and brands.
