The South African dairy industry is undergoing a profound transformation which involves intensive, large-scale production units. Since 1990, the number of dairy farms has declined by 92%, while the number of cows has declined by only 24%. Nevertheless, total milk production has increased by 56%. Although regionally oriented, the structural impact of this consolidation into fewer but larger herds has been considerable.
