Abstract

Waste water containing cheese whey may be difficult to dispose of if pollution is to be limited. Whey is used to good effect in various, often highly nutritious, products such as yoghurt. On the one hand, much more can be done to exploit the possibilities offered by whey while, on the other hand, limiting the outflow in waste water.
