Abstract

Milk must be pasteurised before it is sold to consumers. This is to make sure that the milk is safe and healthy. Milk is pasteurised when it is heated to a temperature of 63°C for 30 minutes. The milk is then quickly cooled down to lower than 5°C. Pasteurised milk has more value, and can be sold to customers for more money.
