Abstract

Value added milk seems to be the new buzz word when it comes to increasing one's profitability and market share in the highly dynamic dairy industry. If dealt with correctly, the entire dairy value chain, from small-scale dairy processors to major multinational processing conglomerates and retailers, can benefit from value addition.
