Abstract

Around the world consumer preference for lamb and mutton varies. In many cases this relates to lack of exposure, familiarity and the traditional use of lamb and mutton in the local culture and cuisine. Consumers not familiar with the flavour of lamb and mutton from pasture-fed animals are likely to be less accepting of this product.
