Every single person from the producer to the end user of foodstuffs, is running a risk to be affected by mycotoxins.Food is a basic human need, but for many countries it is also an important source of hard currency. A nation's internal and external markets can be significantly compromised if food of inferior quality or of a hazardous nature is produced. Consumers' concerns regarding food safety differ widely from person to person, and country to country. In the western world consumers are concerned about pesticides, additives, product irradiation and genetically modified foods. Surprisingly, few consumers are concerned about the microbiological and mycotoxicological contamination of foods.
