Biotechnology is the use and manipulation of living organisms to make useful products to benefit humans. It includes simple processes such as fermentation to make bread and wine (first generation); using organisms and cells to produce new products such as antibiotics, enzymes and vitamins (second generation) and the third generation, known as modern biotechnology, which embraces genetic modification to produce genetically modified organisms (GMOs).
