During the summer 1909-1910 the writer had an opportunity of examining the juice of several varieties of grapes from the Government Wine Farm, Groot Constantia. Samples were taken and analysed at successive stages of growth, from the month of December, when the berries were still small, hard, and opaque, to the date of the vintage in March, when the grapes were fully matured.
