Abstract

Hereford, Afrikaner, Drakensberger, Brown Swiss and Friesland steers were studied. The percentage yield of the retail cuts revealed that the Hereford carries less weight in the topside, silverside and thick flank, but has a relatively heavy brisket, flat rib and thin flank. The Afrikaner and Drakensberger possess heavy humps, whilst Friesland and Brown Swiss have relatively heavy hindshins and shoulders.
