A possible contribution of skeletal muscle myopathy to changes in postmortem appearance and rate of glycogenolysis of skeletal muscle has been investigated in pig carcasses. Serum levels of creatine phosphokinase (CPK), aldolase (Aid) and lactate dehydrogenase (LDH) were measured in the immediate postmortem period from normal carcasses and in those which subsequently developed pale, soft exudative changes (PSE) in their skeletal musculature.
