oa Botswana Notes & Records - An Investigation into the Microbial Ecology of Four Traditionally Dried Leafy Vegetables Consumed in Botswana

Four types of traditionally dried leafy vegetables, Amaranthus thunbergi, Corchorus olitorius, Cloeme gynandra and Phaseolus sp were assessed for the aerobic mesophillic counts, spore counts, enterobacteriaeceae and yeasts. Several kinds of bacteria were isolated using various media. The most prevalent bacteria were spore formers from the genus Bacillus. Other isolates which were either Gram-positive (Micrococcus spp, Pediococcus spp, Staphylococcus spp, etc,) or Gram-negative (Xanthomonas sp., Alcaligenes sp, Pantoea sp., Rahnella sp, Serratia gp., etc,) were also isolated.
