Abstract


The history of Boerekos 1652-1806 is an investigation into the origin of dishes known as Cape cookery to which the name Boerekos has been applied since the eighteenth century. Perceptions that slaves from the East brought the art of spice cooking and certain dishes such as bobotie to the Cape have been proved unfounded. The origin of dishes known as Boerekos at the beginning of the twentieth century was traced to Europe and further back to Roman and Persian-Arab cookery.

Die geskiedenis van Boerekos 1652-1806 is 'n ondersoek na die oorsprong van geregte van die Kaapse koskultuur waarna reeds in die agtiende eeu as Boerekos verwys is. Daar is gevind dat die persepsie dat Oosterse slawe die kuns om met speserye te kook, asook die bereiding van geregte soos bobotie, na die Kaap gebring het, op geen gronde berus nie. Geregte wat aan die begin van die twintigste eeu nog as Boerekos bekend gestaan het, se spore lei almal na Europa en verder terug na die Romeinse en Persies-Arabiese kookkulture.
