Abstract

Ultraviolet light could be the answer to greener and healthier pasteurisation in both the dairy and wine industries. Developed in Cape Town by SurePure, photopurification may be an alternate method used either in conjunction with pasteurisation or on its own. The benefits claimed stem primarily from the fact that photopurification does not use heat.
