Abstract

The majority of food and drink manufacturers are now being forced by their consumers to change the colours they use in their products from artificial or synthetic to natural. The market trends are healthy eating with fewer chemicals in our food and drink. One of the most common colour requirements is red to replace synthetic colours such as Allura Red, Carmoisine or Ponceau 4R.
