Abstract

Often considered a low-cost meat replacement, there are a number of linked scientific studies, which document the beneficial role of proteins from different sources. Technological advances in soybean processing, such as ultra-heat treatment, and the development of alternative soybean varieties are creating new opportunities for manufacturers.
