Mkhize describes her first job out in the field, as literally being out in a field. She was tasked with overseeing a client that feeds safe daily meals to workers. ‘The experience was humbling. I had to ensure when workers got to camp at five am their meal was ready. The tricky part was serving it to them at the right temperature in the middle of a forest. This had to be done in compliance with all food safety standards,’ she explains.
