As consumer awareness increases on what people want to eat, there is growth in demand for manufactured goods from these products. As with other commodities, the production of fruit and vegetable products results in waste and losses. In the fresh produce industry, the term ‘losses’ refers to the unintentional result of the way food is processed. It occurs throughout the supply chain from harvesting to consumption.
