In 1986, the International Dairy Federation (IDF) published a bulletin on the pasteurisation of milk (Bulletin of the IDF No. 200). That bulletin was withdrawn in 2006, as the information on equipment was outdated and because a special issue (No. 9602) was published on “Heat Treatments and Alternative Methods” in 1996. The withdrawal of the bulletin left a gap, and the current publication is intended to fill this gap by addressing technological, microbiological, and nutritional aspects of milk pasteurisation.
